A delicious, simple, and healthy meal that is fun to make and fun to eat!
- The Tofu
- 1 16oz block of firm Tofu (we like the stuff from Minntofu https://minntofu.com/)
- 1/2 cup Corn Starch
- 1/4 cup Canola Oil
- The Sauce
- 1/3 cup Maple Syrup (we have a few really good local brands to choose from)
- 1/3 cup Soy Sauce
- 2 TB rice vinegar
- 1 TB Sesame Oil
- 1 clove of minced garlic (we get fresh, organic bulbs delivered from our local farmers at earthdancefarm.net)
- 1/2 inch of fresh ginger
- 1 tsp cornstarch + 2 TB water
- The Topping
- 1 TB sesame seeds
- 1 green onion
- Directions
- Drain the tofu and press it for 30 minutes (we put it under a cookie sheet with a rock or something on top). This pushes excess water out of the tofu.
- Cut the tofu into small-ish cubes.
- Toss the cubes in the 1/2 cup of cornstarch (a great job for a lively youngling in the mood for shaking a bag of food around for a minute or so).
- In a frying pan, heat the 1/4 cup canola oil over medium-high heat.
- Put the cornstarched tofu cubes into the heat, let each side get crispy to your liking, and then remove from the pan.
- DON’T CLEAN THE PAN YET! You’ve still got sauce to make!
- Mix the soy sauce with the maple syrup by whisking it (another good job for a kiddo) in the pan over medium heat.
- Add rice vinegar and sesame oil and keep WHISKING!
- Add chopped garlic and ginger, KEEP WHISKING!!
- STOP WHISKING! Let it simmer while you:
- in a separate bowl, mix 2 tsp of cornstarch and 2 TB of water, then add that to the mix and WHISK AWAY!
- Time to turn up the heat to HIGH, and let it simmer until it’s a thick, gooey, consistency.
- Turn the heat to low, and mix in the crispified tofu cubes.
- Turn off the heat, and eat over rice! Oh no, you should have started making the rice 15 minutes ago! What are you going to do?
- Run to Bryn Mawr Market to pick up some minute rice.
- Might as well buy ice cream and an adult beverage while you’re here.
- Put rice on your plate, put the delicious sweet & sour tofu on the rice, put the sesame seeds and chopped up green onion on top, and eat with gusto!
